Sell it or smell it.

This is the last post about this video, promise, but the quotable Pat LaFrieda III simply needs more than one post. He says they start early down there on Washington and Leonard. How early? “Sometimes, so early it’s the day before.” Try wrapping your head around that.  And this last nugget is too good that it bears repeating. While talking about his storeroom full of half-a-million pounds of meat, he says the following:

“Meat is like a hand grenade. When you get it, time is ticking. You need to sell it. They say in this business, ‘Sell it, or smell it.’”
